Chicken Sausage and Broccoli Rabe Penne
If broccoli rabe is a bit bitter, chopped broccoli would be a delicious substitute.

Serves 6

arrow_right Water, 2 quarts
 arrow_right Uncooked Multigrain Penne, 8 oz
 arrow_right Broccoli Rabe, 1 lb
 arrow_right Olive Oil, 1 Tbls
 arrow_right Smoked Chicken Sausage, 6 oz
 arrow_right Black pepper, 1/2 tsp
 arrow_right Salt, 1/4 tsp
 arrow_right Lemon Juice, 1 1/2 Tbls

Cooking Instructions

 Trim and chop broccoli
 Diagonally cut sausage into 8 pieces
 Bring water toa boil
 Add pasta and cook 7 minutes
 Add broccoli and cook 2 minutes.
 Drain pasta, reserving 2/3 cup cooking liquid.
 Heat a large skillet over medium heat with oil.
 Add sausage and cook 6 minutes or until browned.
 Add 2/3 cup researd pasta water, pasta mixture, pepper, and salt to pan and bring to a boil.
 Cook 2 minutes or until slightly reduced.
 Stir in juice and sprinkle with cheese.
