Salsa Verde
Delicious and low-calorie (27 calories per serving) salsa verde. Use for chips or for pouring over enchiladas.

arrow_right Tomatillos, 1 1/2 lb
 arrow_right Serrano pepper, 1 med
 arrow_right Garlic clove, 1 large
 arrow_right Cilantro, 1 Tbls (when chopped)
 arrow_right White onion, 4 oz

Cooking Instructions

 Peel tomatillos
 Peel garlic clove
 Coarsely chop cilantro
 Finely dice white onion
 Boil tomatillos 15 to 20 minutes
 Drain, reserving 1/ cup liquid
 Place the tomatillos, pepper and garlic in a blender
 Blend at slow speed, adding reserved liquid as needed.
 Process until slightly chunky
 Transfer the mixture to a serving bowl
 Add cilantro, onion and salt
 Mix well and serve with chips
