Salmon en Papillote with Leeks
This simple technique seals in flavor without adding any additional fat. 110 calories per serving.

arrow_right Leek, 1 med
 arrow_right Green beans, 12 oz
 arrow_right Baby potatoes, 1 lb
 arrow_right Salmon fillet, 4
 arrow_right Smoked paprika, 4 tsp

Cooking Instructions

 Preheat oven to 400 F
 Halve leek and wash
 Trim green beans
 Quarter the lime
 Cut 4 16-inch long pieces of parchment paper
 Quarter the leek lengthwise
 Cut into thirds crosswise
 Cut the green beans into 2-inch pieces
 Quarter the potatoes
 Place 1/4 of the grean beans in the center of each piece of parchment paper.
 Top with the leeks and potatoes and dash with salt and pepper.
 Place the salmon fillets on top and sprinkle each with 1 tsp paprika and salt
 Crimp the edges of the paper so no steam can escape.
 Transfer packets to a baking sheet and bake about 20 minutes.
 Unwrap on plate.
 Serve with lime wedges.
