Beet Salad
Beets are high in folate, a vitamin that may help ward off heart disease; this dish delivers 1/3 of your daily requirement.

Ingredients

arrow_right Golden beets, 4 Med (4 oz each)
 arrow_right Pine nuts, 1/3 cup
 arrow_right Balsamic vinegar, 1 Tbls
 arrow_right Black pepper
 arrow_right Olive oil, 1 Tbls

Cooking Instructions

PREPARATION
 Heat oven to 400°F
 Remove stems and root ends from beets
 Wrap each beet in foil.
 
 DIRECTIONS
 Roast beets until soft, about 1 hour
 Cool slightly; remove foil
 Rub off skins
 Cut into wedges
 Toss with nuts and vinegar
 Season with salt and pepper
 Add oil and toss
 
 SERVING
 Divide among 4 plates
 Crumble cheese on top
