To save time during your party, mix batch drinks in a large container (even a stock pot will do) several hours before guests arrive. Just remember, anything that bubbles, whether club soda or Champagne, should be set aside and added to cocktails at the moment they are served. Be sure to taste the drink beforehand and adjust the balance as necessary.

arrow_right Light rum, 750 ml bottle arrow_right Fresh mint leaves, 2 cups arrow_right Superfine bar sugar, 1 1/3 cups arrow_right Lime Juice, 1 1/4 cups

Cooking Instructions
PREPARATION Slice 1 lime into wedges Combine the mint, sugar and lime juice in a pitcher and muddle the mint to release the oils. Add rum and stir until all the sugar is dissolved. Add a plastic bag of ice (so the water doesn't melt) SERVING Strain into an ice-filled highball and top with a few oz of club soda Garnish with a sprig of fresh mint
