Black Bean Burgers with Spicy Cucumber and Red Pepper Relish
The cucumber releases some liquid while chilling, so serve relish with a slotted spoon. Shape the patties, and wrap them in wax paper to transport them from the kitchen to the patio grill. Serve with baked potato chips and dill pickle spears.

 arrow_right Cucumber, 1 Lg
 arrow_right Red Bell Pepper, 1 Lg
 arrow_right Red Onion, 1 Small
 arrow_right Lime Juice, 1 Tbls
 arrow_right Honey, 1 Tbls
 arrow_right Dill, 1 Tsp
 arrow_right Salt, 1/8 Tsp
 arrow_right Ground Red Pepper, 1/8 Tsp
 arrow_right Burgers:
 arrow_right Black Beans, 1 (15 Oz) Can
 arrow_right Dry Breadcrumbs, 1/2 Cup
 arrow_right Minced Red Onion, 1/4 Cup
 arrow_right Dried Oregano, 1/2 Tsp
 arrow_right Ground Cumin, 1/4 Tsp
 arrow_right Black Pepper, 1/8 Tsp
 arrow_right Egg, 1 Large
 arrow_right Cooking Spray
 arrow_right Light Mayonnaise, 1/4 Cup
 arrow_right Hamburger Buns, 4 Buns

Cooking Instructions

 Peel & finely chop cucumber to yield 2/3 cup
 Finely chop:
  -Red bell pepper to yield 1/2 cup
  -Red red onion to yield 1/2 cup
  -Dill to yield 1 tsp
 To prepare relish, combine first 8 ingredients in a medium bowl.
 Cover and chill 2 hours.
 Rinse and drain black beans
 Mince red onion
 To prepare burgers, place beans in a large bowl & partially mash with a fork.
 Stir in breadcrumbs and next 5 ingredients (breadcrumbs through egg).
 Divide bean mixture into 4 equal portions, shaping each into a 1/2-inch thick patty.
 Prepare grill.
 Place patties on grill rack coated with cooking spray & grill 5 minutes on each side or until thoroughly heated.
 Spread 1 tablespoon mayonnaise on the bottom half of each bun & top each with a patty, 1/4 cup relish, and top half of bun.
 Garnish with dill sprigs, if desired.
