Onion and bacon pair beautifully with Brussels sprouts especially when you put a nice char on them. This hearty side dish was a total experiment on my part. Brussels sprouts love the cool weather of fall and early winter. If you can find them still attached to the stalk, don’t be intimidated—buy them, as they’re likely more fresh. All you need to do is slice off each sprout with a paring knife. However you find them at the market, this is a delicious way to prepare them.

Cooking Instructions
PREPARATION Trim ends off Brussels Sprouts Chop: onion, garlic, and bacon Preheat oven to 350 F COOKING Put all ingredients in Pirex baking dish. A 9" x 12" might be a bit large, but whatever fits. Drizzle a significant amount of olive oil over the ingredients. Bake for 20 minutes, uncovered. Turn oven to broil and move baking dish to the top rack. Broil sprouts for about 2 minutes to get a good char.
